    Anthocyanidins are grouped into 3-hydroxyanthocyanidins, 3-deoxyanthocyanidins, and O-methylated anthocyanidins, while anthocyanins are in the forms of anthocyanidin glycosides and acylated anthocyanins. The most common types of anthocyanidins are cyanidin, delphinidin, pelargonidin, peonidin, petunidin, and malvidin.
    Anthocyanidins are water-soluble pigments, responsible for most of the red, blue, and purple colors of fruits, vegetables, flowers, and other plant tissues or products (Mazza et al., 2004 ).
    Cyanidin, delphinidin, malvidin, peonidin, petunidin, and pelargonidin are the six common anthocyanidins. Following consumption, anthocyanin, absorption occurs along the gastrointestinal tract, the distal lower bowel being the place where most of the absorption and metabolism occurs.
    Anthocyanidins have a 2-phenyl-benzopyrylium core and hydroxylation positions can be C3 position in C ring and 3′, 4′, and 5′ position in B ring of the molecule. They are water-soluble, unsaturated, unoxidized compounds, and account for plant coloration depending on pH as plant pigments .
